    These Swedish Chocolate Balls (or hearts!), also known as ‘Chokladbollar’ in Swedish, are a fav among our office and friends and are super easy to make! Have fun with the kids and make them into any shape for any occasion! Delish! Swedish Chocolate Hearts One stick unsalted butter (softened) 2 1/2 cups rolled oats 3/4 cups sugar 1 tsp vanilla extract or 1 tbsp vanilla sugar 1 1/2 tbsp espresso (cold) 3 tbsp unsweetened cocoa Garnish: Coconut flakes or sprinkles Mix all the ingredients together with your hands or in food processor until well combined. Adjust consistency with coffee or oats (it should be a bit sticky but firm). Roll them in to 20 – 25 balls or cut them into heart shapes and garnish. …

    December 13th is St Lucia Day, a time for singing, mulled spiced wine, and saffron buns. Originally a Catholic feast day, Lucia is a special day that is celebrated all around Sweden, especially in schools and nurseries. The day starts with a Lucia procession early in the morning when it is still dark outside. Lucia herself enters the room wearing a long white Lucia dress with a red silk ribbon around her waist and a crown of candles on her head. She is followed by singing flower girls with glitter in their hair, star boys wearing cone hats, and last but not least, mischievous gingerbread men and elves.     It’s a crisp November morning in Sweden, the daily song and dance hour has almost come to an end at “Förskolan Solen” (Daycare Sun). 15 children and 3 teachers finish a nutritious fruit snack before heading outside to 20º F and a thin layer of white powdery snow on the ground. Children begin to pair into small groups, while teachers escort kids to their cubbies. Every child has their own little area with hooks, shelves and drawers where they keep all their clothing. Properly hung, folded and name-labeled. Learning to dress for weather is a very important lesson for the day.
